Gut Healthy Red Cabbage Coleslaw Recipe
Red cabbage is high in antioxidants, and cabbage also contains glutamine which is great for improving your gut health. Glutamine is soothing for the gut and can help intestinal permeability (i.e. leaky gut). This salad goes really well with BBQs in the summer, and provides some colour and crunch for your parties.
- Half a red cabbage
- 2 medium carrots
- 2-4 spring onions finely chopped
- any other vegetables (e.g. beetroot, fennel, celeriac or an apple)
- Toasted pumpkin and sunflower seeds for topping
- For dressing:
- 1 tbsp tamari (soy sauce)
- juice of 1 lime
- 2 crushed garlic cloves
- 1 tsp toasted sesame oil
Mix sauce contents together in a small bowl. GRate the vegetables into a large bowl then add dressing just before serving (can go a bit soggy if left for a long time. Add toasted seeds and mix well.
