Ingredients – makes 12
- 100g ground almonds
- 120g oats (ground in food processor)
- 1/2 tsp baking powder
- 5 eggs
- 1/2 tsp cinnamon
- 2 mashed bananas
- 100g raisins
- Mix dry ingredients in a large bowl
- Add mashed banana then beat in each egg slowly
- Add raisins
- Pour into to silicon cupcake moulds and cook for 25 mins on 160 fan oven.
QUICK TIP – I grind up my oats in a Nutribullet, then pour these into a bowl with the other dry ingredients. Then I blend up the banana and eggs in the Nutribullet too, and pour these into the dry ingredients together. This reduces the mixing time.
