Breakfast Muffins

Ingredients – makes 12

  • 100g ground almonds
  • 120g oats (ground in food processor)
  • 1/2 tsp baking powder
  • 5 eggs 
  • 1/2 tsp cinnamon
  •  2 mashed bananas 
  • 100g raisins


  1. Mix dry ingredients in a large bowl
  2. Add mashed banana then beat in each egg slowly
  3. Add raisins 
  4. Pour into to silicon cupcake moulds and cook for 25 mins on 160 fan oven.

QUICK TIP –  I grind up my oats in a Nutribullet, then pour these into a bowl with the other dry ingredients. Then I blend up the banana and eggs in the Nutribullet too, and pour these into the dry ingredients together. This reduces the mixing time.
