Five Minute Healthy Lunch – Lentils & Spinach
Puy lentils are sometimes called the ‘caviar for the poor’! They are delicious, soft and hold their shape. High in fibre, low in calories lentils are a perfect lunch item. You can whip up this warm lentil salad in 5-10 minutes.
Warm Lentil Salad With Spinach

- 125g pre-cooked Puy lentils (I use Merchant Gormet)
- 5 large button mushrooms
- 1 clove garlic
- 50g Halloumi cheese
- dash soy sauce
- Chop and fry the garlic, Halloumi and mushrooms in a little oil
- Add spinach, lentils and soy sauce and stir well for around 2 minutes
- Dish up and enjoy for lunch
Why I like this meal
This is a fantastic meal that will keep you full until dinner. Lentils are a great source of vegan protein, and also fibre which feeds you gut microbes.
I tend to make this lunch once a week. I do enjoy eating bread as well sometimes, but I try not to eat toast every day for lunch.
Variety in our diet helps to improve our immune system and better support our beneficial gut bacteria. So if we’re eating the same things every day for lunch, then we’re missing an opportunity to build a diverse range of vegetables, fibre and protein.
