Five Minute Healthy Lunch – Lentils & Spinach

Puy lentils are sometimes called the ‘caviar for the poor’! They are delicious, soft and hold their shape. High in fibre, low in calories lentils are a perfect lunch item. You can whip this up in 5 minutes.Β 

Ingredients – 1 portion

  • 100g fresh washed spinach
  • 125g pre-cooked Puy lentils (I useΒ Merchant Gormet)
  • 5 large button mushrooms
  • 1 clove garlic
  • 50g Halloumi cheese
  • dash soy sauce



  1. Chop and fry the garlic, Halloumi and mushrooms in a little oil
  2. Add spinach, lentils and soy sauce and stir well for around 2 minutes
  3. Dish up and enjoy for lunch
