Shakshuka – Spicy Brunch Eggs
- 100g kale (washed, stalks removed)
- 100g spinach (washed)
- 15g pine nuts
- 15g pumpkin seeds
- slug of olive oil
- handful or basil or parsley (or both)
- handful of green olives
Toast the pine nuts in a frying pan for 1 minute, then add the pumpkin seeds and toast until the pumpkin seeds start to pop. Grind up seeds when they are cool enough to handle.
Blend up the spinach and kale with a bit of olive oil in a Nutribullet (or similar high powered blender). You might need to stir sides a little, or add a tiny bit of water. Then add the ground seeds and blend some more. Stir this sauce into pasta or over roasted vegetables. You can add grated mature cheddar cheese as optional extra.
This sauce is rich in magnesium and calcium which are both great for women’s hormone balancing. Magnesium is also nature’s tranquilizer which helps to calm and relax muscles. Green leafy vegetables are great to include in our diet every day if you can.
