Spicy eggs for a lovely weekend brunch - start your day with protein and healthy fats

Ingredients

1 onion 2 cloves garlic 1 red pepper 1 tin tomatoes Chilli powder Salt & pepper 2 eggs per person

Preparation

Chop and fry the garlic, and onion in a little oil. Add red pepper and beans (if using), and the tin of tomatoes Add small sprinkle of chilli, salt and pepper Make a small well and crack in your eggs. Keep cooking until eggs are cooked to taste. Dish up

Why I like this meal

Sometimes you need a tasty start to the day, especially after a big night out. Whilst a traditional greasy breakfast fry up can hit the spot, sometimes you feel better with a bit of extra nutrition.

This meal could work as a healthy mid week lunch if cooking seems too much in the mornings.
